I love August. All the tomatoes are starting to ripen, the peppers are turning colors, the onions are dry. Perfect time to make garden salsa! I try to use all fresh ingredients from my garden or local farm. I do not yet have a lime tree but I do successfully grow lemons (yes here in the northeast – I do bring the tree indoors for the winter).
3 tomatoes
1/2 red onion
2 jalapeno or other chili (or substitute a small sweet pepper variety to keep the heat down)
1/2 cup of cilantro
juice from half a lime
salt and pepper to taste
Roughly chop the tomatoes, onions, and peppers and pulse in a food processor (or just finely chop ingredients by hand) and mix together in a bowl. Finely chop or process cilantro and add to other ingredients. Squeeze lime juice into bowl, add salt and pepper to taste and if you can manage to, cover and place in refrigerator for about an hour. That rarely happens in my house as the salsa is usually devoured as soon as it is made.
